Ingredients
  

  • 4 medium zucchini halved lengthwise
  • 1 pound ground turkey or beef
  • 1 cup bell peppers diced
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup marinara sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • Fresh parsley for garnish optional

Instructions
 

  • Prep the Zucchini: Preheat the oven to 375°F (190°C). Scoop out the centers of the zucchini halves, leaving a shell about 1/4 inch thick. Set the zucchini shells aside.
  • Cook the Filling: In a skillet over medium heat, add the ground turkey or beef. Cook until browned, breaking it apart with a spoon. Stir in diced bell peppers, onion, and garlic, cooking until softened.
  • Add Sauce and Seasoning: Mix in the marinara sauce and Italian seasoning. Season with salt and pepper to taste. Let it simmer for a few minutes.
  • Fill the Zucchini: Spoon the meat mixture into the hollowed zucchini halves. Top each filled zucchini boat with shredded mozzarella cheese.
  • Bake: Place the stuffed zucchini in a baking dish and cover with foil. Bake for 25-30 minutes, then uncover and bake for an additional 10 minutes until the cheese is melted and bubbly.
  • Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh parsley if desired, and serve warm.
