Ingredients
  

  • 2 medium zucchinis grated
  • 1 teaspoon salt
  • ½ cup all-purpose flour
  • ¼ cup grated Parmesan cheese
  • ¼ cup green onions chopped
  • 2 large eggs
  • 2 cloves garlic minced
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional
  • Olive oil for frying

  • Prepare the Zucchini: Grate the zucchinis and place them in a clean kitchen towel or cheesecloth. Squeeze out excess moisture to ensure the fritters are crispy.
  • Mix Ingredients: In a bowl, combine the grated zucchini, salt, flour, Parmesan cheese, green onions, eggs, garlic, black pepper, and red pepper flakes. Mix until well combined.
  • Heat Oil: In a large skillet, heat olive oil over medium heat. You want enough oil to cover the bottom of the skillet.
  • Form Fritters: Scoop about 2 tablespoons of the zucchini mixture and form into patties. Carefully place them in the hot oil.
  • Fry: Cook the fritters for about 3-4 minutes on each side until golden brown and crispy. You may need to fry them in batches to avoid overcrowding the pan.
  • Serve: Once cooked, transfer the fritters to a paper towel-lined plate to absorb excess oil. Serve warm with your choice of dipping sauce.
