  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup diced tomatoes canned or fresh
  • 1 cup shredded cheese optional, for topping
  • Chopped fresh cilantro or parsley for garnish optional
