Ingredients
  

  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 potatoes diced
  • 1 cup green beans chopped
  • 4 cups beef broth
  • 1 can 14.5 oz diced tomatoes, undrained
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions
 

  • Brown the Beef: In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks.
  • Sauté Vegetables: Add the chopped onion and garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.
  • Add Remaining Ingredients: Stir in the carrots, potatoes, green beans, beef broth, diced tomatoes, Worcestershire sauce, thyme, salt, and pepper.
  • Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 25-30 minutes, or until the vegetables are tender.
