- 1 pound ground beef
- 1 cup uncooked rice
- 2 cups beef broth
- 1 medium onion chopped
- 1 can 10.5 oz cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup mixed vegetables optional
Preheat the oven to 350°F (175°C).
In a large skillet, brown the ground beef over medium heat. Drain excess fat.
Add chopped onion and sauté until soft. Stir in garlic powder, paprika, salt, and pepper.
In a large mixing bowl, combine the cooked beef mixture with uncooked rice, beef broth, cream of mushroom soup, and mixed vegetables if using.
Pour the mixture into a greased 9x13 inch baking dish. Cover with aluminum foil and bake for 30 minutes.
Remove the foil, sprinkle shredded cheddar cheese on top, and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
