Ingredients
  

  • 1 pound lean ground beef
  • 2 cups mixed vegetables e.g., bell peppers, broccoli, snap peas
  • 1 medium onion sliced
  • 2 cloves garlic minced
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon sesame oil
  • 1 tablespoon ginger grated
  • Salt and pepper to taste
  • 2 green onions chopped (for garnish)
  • Cooked brown rice or quinoa for serving

Instructions
 

  • Brown the Beef: In a large skillet or wok, heat the sesame oil over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spatula as it cooks.
  • Sauté the Vegetables: Add the onion and garlic to the pan, cooking until the onion is translucent. Then, stir in the mixed vegetables and ginger, cooking until they are tender-crisp.
  • Add the Sauce: Pour in the soy sauce, stirring to coat the beef and vegetables evenly. Cook for another 2-3 minutes to heat through and allow the flavors to meld.
  • Serve: Remove from heat, adjust seasoning with salt and pepper if needed, and serve over cooked brown rice or quinoa. Garnish with chopped green onions.
