  • 1 pound ground beef
  • 1 medium onion diced
  • 1 bell pepper diced (any color)
  • 2 cloves garlic minced
  • 1 cup corn fresh, frozen, or canned
  • 1 can diced tomatoes 14 ounces
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped cilantro or parsley for garnish optional

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, and sauté until they are softened (about 5-7 minutes).
  • Add the minced garlic and cook for an additional minute until fragrant.
  • Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it up with a spoon or spatula as it cooks (about 5-7 minutes).
  • Stir in the corn, diced tomatoes, chili powder, cumin, salt, and pepper. Mix well and let simmer for about 10 minutes, allowing the flavors to meld together.
  • Taste and adjust seasoning if necessary. Garnish with chopped cilantro or parsley before serving.
