- 1 teaspoon salt
- ½ cup all-purpose flour
- ¼ cup grated Parmesan cheese
- ¼ cup chopped green onions
- 2 large eggs beaten
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- Oil for frying such as olive oil or vegetable oil
Prepare the Zucchini: Grate the zucchinis and place them in a clean kitchen towel. Sprinkle with salt and let sit for about 10 minutes. This will draw out excess moisture.
Mix the Batter: In a bowl, combine the grated zucchini, flour, Parmesan cheese, green onions, beaten eggs, garlic powder, and black pepper. Stir until well combined.
Heat the Oil: In a large skillet, heat about 1/4 inch of oil over medium heat. You can test if the oil is ready by dropping a small amount of the batter into the pan; it should sizzle.
Fry the Fritters: Using a tablespoon, drop spoonfuls of the batter into the hot oil, flattening them slightly. Fry for about 3-4 minutes on each side, or until golden brown.
